Za’atar is both a spice blend and a plant, and the two get confused. The blend contains sumac, sesame and salt alongside the herb. The plant is Origanum syriacum, and this profile is about the plant.
It tastes like two herbs at once
John Scheepers Kitchen Garden Seeds describes the flavour as evoking intense thyme and oregano simultaneously, which is a fair description of something that is genetically oregano but reads as thyme on the palate. It is used across North African, Mediterranean and Middle Eastern cooking, and it is what makes a proper za’atar blend taste different from an oregano-and-sumac approximation.
Grow it like the other Mediterranean herbs
It wants full sun, at least five hours of bright light, and sharp drainage. Rich, damp soil produces a lot of soft growth and much less flavour, which is the same trade every Mediterranean herb makes.
Mature size is 12 to 24 inches, spaced about a foot apart. Seed is fine and needs light to germinate, so surface sow rather than covering it.
Hardy in zones 7 to 10, annual elsewhere
It is a tender perennial. In zones 7 through 10 it overwinters and gets woodier and better each year. Colder than that, it is grown as an annual or brought inside, and our calendar treats it as an annual so it keeps zone pages across the wider range where people grow it that way.
