Growing Sweet Marjoram: A Complete Profile

Sweet marjoram is oregano’s gentler relative: same genus, much less aggressive flavour, sweeter and more floral. It’s the herb that works in things oregano would bulldoze, like egg dishes, buttered carrots, and anything with cream in it.
The catch is that it’s a tender perennial. Outdoors it only survives winter in zones 9 and 10. Everywhere else it’s an annual whether you intended that or not.
Sowing it
Start indoors about seven weeks before your last frost. Sow on the surface and leave it uncovered, because it needs light to germinate and the seed is small enough that a covering of compost is a burial.
Set transplants out about a week after your last frost. It wants warmth and won’t do anything useful until the soil has some in it. Around 65 days to a usable harvest.
Plant it densely. Marjoram is small, and a group of plants gives you enough to cook with.
Keeping it worth growing
The single thing that separates a good marjoram plant from a disappointing one is harvesting. Pinch the leafy tops regularly, starting before you think the plant is big enough. Every pinch forces branching. Left alone, it puts up one leggy stem, flowers, and stops making the leaves you wanted.
Once it flowers the flavour drops off. The flowers are pretty and the bees like them, so it’s a genuine trade rather than a mistake, but if you’re growing marjoram to eat, keep pinching the buds out.
What goes wrong
It dies over winter and you think you killed it. In zones 8 and below, it was always going to. This isn’t a failed overwintering, it’s the plant’s normal life span in your climate. Plan to sow again.
It’s leggy and sparse. Not enough pinching, or not enough sun. Both, usually.
It rots at the base. Marjoram is Mediterranean and wants sharp drainage. It will forgive you forgetting to water it long before it forgives wet feet. If your soil is heavy, grow it in a pot.
If you want to keep a plant rather than resow, take cuttings in late summer or lift the whole thing into a pot and bring it onto a windowsill. It sulks indoors but survives, and gives you a head start in spring.
Where to put it
Full sun, free-draining soil, and close to the kitchen door, because the herbs you use are the ones you can reach without putting shoes on.

- Sweet marjoram (Origanum majorana): Buy it by the botanical name. 'Marjoram' on a label can also mean pot marjoram (Origanum onites) or wild marjoram, which is just oregano. Only O. majorana has the sweet, mild flavour people are after. (source)
