Cauliflower has a reputation as the difficult brassica, and it’s mostly earned: unlike broccoli or cabbage, it doesn’t tolerate a check in growth well, and any real stress — heat, drought, a root disturbance during transplanting — tends to show up later as a small, loose, or oddly colored head instead of the tight white curd you’re after.
What to expect
Start seed indoors about six weeks before your last frost, same as broccoli, but plan for a longer wait — cauliflower typically takes a bit more time to mature. Consistent moisture and steady temperatures matter more here than with other brassicas; wide swings in either one are the most common reason a head “buttons” (forms tiny, premature curds) instead of sizing up properly. White varieties also need blanching — tying the outer leaves over the developing head to block sunlight — to stay pale instead of yellowing or discoloring.
Common problems
A small, premature head (buttoning) almost always traces back to stress the plant experienced weeks earlier — a cold snap, a dry spell, or root damage at transplant — rather than anything wrong at harvest time. Loose, uneven curds are often a heat problem: cauliflower does best maturing in cool weather, and a head that develops during a hot stretch tends to come out ricey and less firm.
