Growing Caraway: A Complete Profile

Caraway is grown for its seed, the familiar flavor in rye bread and sauerkraut, and that changes the whole shape of the crop compared to a leafy annual herb. It’s a true biennial: plant it this year, and it won’t set the seed you’re after until next summer.
A two-year commitment from one sowing
Direct-sow 1/4 inch deep in early spring or fall. Germination takes 10 to 14 days. Whichever season you sow in, the plant spends its first year as a low, ferny rosette and only bolts, flowers, and sets seed in its second summer. Space plants 4 to 8 inches apart; mature flowering stalks reach 24 to 36 inches.
Because nothing worth harvesting happens in year one, caraway needs a spot it can occupy for two full seasons rather than a square you’re planning to rotate through annually.
Harvest before the seed shatters
Cut or pull whole plants as the seed heads begin to ripen but before they shatter and drop seed on their own, since a caraway plant that’s fully dry in the field will lose much of its harvest to the ground. Dry the cut seed heads down to about 10% moisture at no more than 100°F before storing.
Young plants need help against weeds
Caraway seedlings are slow and poor competitors against weeds in their first year, so keep the bed clean while the rosette is establishing. It prefers full sun and well-drained sandy loam; heavy, wet soil is a bigger threat to a young plant than cold ever is.
