Baby’s breath is the classic airy filler flower, a cloud of tiny white blooms used to soften and fill out cut arrangements built around bigger, showier flowers. It’s an easy annual, but a unusual one: it performs best in relatively poor soil, the opposite of what most cutting-garden flowers want.
Sowing it
Direct-seeding is the recommended method, sown 1/8 inch deep and barely covered right after your last frost. It can also be started indoors 6 to 8 weeks before that date if a head start matters. Germination takes 7 to 14 days at 70-72°F. Space plants 8 inches apart; mature plants reach 18 to 24 inches tall.
For a steady supply through summer rather than one big flush, sow a new round every couple of weeks.
Rich soil works against it
Fertile, heavily amended soil pushes gypsophila into excessive, soft growth that flops and gets damaged by rain, exactly the opposite of the wiry, airy stems the plant is grown for. Full sun and lean ground produce the sturdier result most cutting gardeners are after.
Harvest at the right stage
Cut sprays once 70 to 90% of the individual flowers have opened, the stage that balances the most bloom against the longest usable vase life.
